Ingredients
- 120 ml olive oil
- 1 onion, chopped
- 3 cloves of garlic, chopped
- 6 large tomatoes, skinned, deseeded and chopped
- 1 kg Adora potatoes
- 250 grams lardons (bacon cubes) or minced meat
- salt
- fresh ground pepper
- parsley, to garnish

Preparation
About 25 minutes; Baking time 45-60 minutes.
Preheat the oven to about 190° C.
Cut the potatoes lengthways into small wedges and pat them dry with
a clean tea towel or kitchen paper.
Heat the oil in a large frying pan and fry the onions and garlic for
about 5 minutes (without browning).
