Recipes | Tomato - Potato - Oven dish with Adora

For 4 people.

Ingredients

  • 120 ml olive oil
  • 1 onion, chopped
  • 3 cloves of garlic, chopped
  • 6 large tomatoes, skinned, deseeded and chopped
  • 1 kg Adora potatoes
  • 250 grams lardons (bacon cubes) or minced meat
  • salt
  • fresh ground pepper
  • parsley, to garnish

A frying pan and a baking dish

Preparation
About 25 minutes; Baking time 45-60 minutes.

Preheat the oven to about 190° C. Cut the potatoes lengthways into small wedges and pat them dry with a clean tea towel or kitchen paper. Heat the oil in a large frying pan and fry the onions and garlic for about 5 minutes (without browning).

Add the potatoes and cook for 10 minutes. Add about two thirds of the tomato mixture and fry this all another 1 minute. Add pepper and salt to taste. Put the mixture in a baking dish or casserole and put it in the oven for 45 to 60 minutes. Since the potatoes have to be ready at the same time, it is important that they are covered around with oil. Add eventually some extra olive oil. Add the remaining tomatoes 5 minutes before the end of oven time. Garnish with parsley.

Variants
Instead of tomatoes you can also use firm mushrooms and/or paprika's.
